SUMMARY:
To be responsible for the management and production of food for 2 restaurants, bar and banqueting for 250 people. Have a passion for cooking, ensuring that the food produced is of the highest standard with in-depth flavours and balance. Compile seasonal menus. Implement standard recipes and food specifications. Be innovative and fully au fais with food trends in this region. Be in control of a kitchen budget and achieve the company’s food gross profit as set out in the budget. Be a team leader and have the ability to lead a strong and focused team. Be fully responsible for the company safety management system and HACCP compliance
KEY RESPONSIBILITIES:
** manage the purchasing, preparation, cooking and presentation of all food products ensuring that the company’s high standard is maintained
** implement and monitor portion and wastage controls, over production and stock rotation
** evaluate food products for pricing and quality in line with company policy
** monitor at all times the quality of cooked meals to ensure that the highest of standards are met
** be organised and at all times fully au fais with the business demands of the company
** co-ordinate and supervise staff under your control ensuring that presentation and quality are achieved and organise training where necessary
** be competent with staff rostering ensuring maximum productivity and at the same time ensuring that the high standards in quality and service are not compromised
** maintain a good working relationship with other departments within the company
** as a member of the senior management team participate in developing strategies to further develop the business going forward
** maintain the highest standards of food hygiene, HACCP, Health and Safety ensuring that all regulatory requirements are adhered to
** ensure that all records are completed accurately in line with the various regulations
** to report / log kitchen maintenance and ensure that same is actioned
** to attend company department meetings
** any other reasonable requested made by management from time to time …..
EXPERIENCE REQUIRED:
** worked as an Executive Head Chef for at least 5 consecutive years for a company and be capable of managing the food operation of 2 restaurants and banqueting for 250
** have the ability to be innovative and fully au fais with food trends in this region and above all continue with the high standards for excellent food that this hotel is renowned for
** previous experience of managing food costs, budget control, achieving food gross profits is essential
** be a hands-on team leader with exceptional motivational skills
** experience of training and developing skills in the kitchen team
